If you don’t feel like switching the oven on but still want a proper roast, this air fryer roast lamb is a winner. It’s simple, flavourful and you still get those beautiful drippings for gravy.
Best for: small to medium lamb roasts (not shanks), weekend cooking and hot-weather roasting.

Rub the lamb with crushed garlic, mustard, fresh thyme, rosemary, salt and black pepper. Make sure it’s coated well, this is where the flavour lives.
Place the lamb into the air fryer basket and cook at 160°C for 35 minutes.
Turn the lamb, add halved potatoes around it, season lightly with salt and pepper, and drizzle with a little olive oil if you like.
Increase the temperature to 180°C and cook for a further 25 minutes.
Remove the lamb and rest for 10 minutes before slicing to keep it juicy.

Pour the drippings from the air fryer basket into a small pan, add a 1/3 cup flour and mix with wate, simmer gently and season to taste.
Lamb shanks need slow, moist cooking. For best results, braise them first, then finish in the air fryer if you want colour.
