Ingredients

  • Oil
  • 3 green chillies (optional)
  • 1 kg lamb chops
  • 2 tablespoons garlic and ginger
  • A few sprigs fresh thyme
  • Curry leaves
  • 2 tablespoons Robertson’s All-in-One Spice (or seasoning of choice)
  • About 2 teaspoons Worcestershire sauce
  • 1 chicken stock cube
  • 3–4 potatoes, peeled and sliced
  • About ¾ cup water
  • 2 onions, sliced
  • Salt, to taste
  • Fresh coriander (dhania), chopped

Method

  1. Heat a large, flat pot over medium-high heat and add oil.
  2. Add the green chillies and allow them to blister slightly.
  3. Add the lamb chops and fry for about 6 minutes per side until lightly browned.
  4. Add the garlic and ginger, thyme, and curry leaves. Stir well.
  5. Start scraping the browned bits at the bottom of the pot — this builds flavour.
  6. Add the all-in-one spice, Worcestershire sauce, and stock cube. Mix gently.
  7. Add the potatoes, water, and sliced onions.
  8. Cover and allow to cook until the potatoes are soft and the gravy has reduced.
  9. Season to taste.
  10. Garnish with chopped coriander and serve hot.

  1. Start with a large flat pot on medium to high heat.
  2. Add oil and green chillies.
  3. Allow chillies to blister
  4. Next goes in the chops
  5. Allow the chops to fry for about 6 minutes a side until slight browned.
  6. Add the garlic and ginger, thyme and curry leaves
  7. Mix well and allow to cool.
  8. Start scraping the burnt bits at the bottom to add to the flavour we building.
  9. Add the all in one spice and Worcestershire sauce. Mix gently but well and add the stock cube.
  10. Next add the sliced potatoes and water , add the sliced onions and allow to cook.
  11. Season according to taste.
  12. Once the potatoes are soft, garnish with chopped coriander.
  13. Serve with dhall and rice or with mash or one its own with fresh white bread.
