Today I am sharing with you, a dish that shows up regularly on our dinner table. It’s one my husband’s favourite meals that he ate often, growing up in Switzerland. The Swiss call this dish, Rahm Schnitzel. Rahm basically translates to “cream” and schnitzel well that means ” a thin slice of meat, usually veal, that is coated in breadcrumbs. ” I remember eating this for the first time in Switzerland and i absolutely loved it. The original dish doesn’t call for onions or garlic seasoning, but I feel that it adds depth to this delicious meal.

I obviously have adapted the recipe to suit my families needs and tastebuds. I usually make this recipe with pork tenderloin (fillet) as it is my husband’s favourite, but I do prefer the chicken option. The recipe remains the same for both pork or chicken.

It is creamy, full of flavour and a meal that will be loved by all. I serve it with Potato Rosti, ( I will share a recipe of that soon), or pasta of choice and sometimes we have it with rice or mashed potatoes.

Creamy Chicken and Mushroom – Rahm Schnitzel

 

A winning combination of chicken, mushroom and cream. An easy and delicious dinner that will become a regular in your home. 

Prep Time 10 mins Cook Time 38 mins Total Time 48 mins Servings: 5

Ingredients

Directions

  1. Dust the chicken fillets with the flour, garlic and herb seasoning and 2 teaspoons of paprika
  2. Add olive oil to a large Dutch oven on medium to high heat and fry the chicken in batches - remove and set aside Add a blob of butter to the pot and in with the onions
  3. Allow the onions to soften before addin the mushrooms and season a little

  4. Mix well and add in the the rest of the paprika, Italian herbs, chicken stock, water and Worcestershire sauce and allow to simmer for a few minutes - lower heat

  5. Add in the cream and once thickened slightly, ( about 4 minutes) add the chicken back to the pot Simmer for 3-4 minutes and remove from the heat

    Serve with pasta, rice or Rosti
