Planning vegetarian dinners for an entire week can sometimes feel harder than it should, especially when you do not want to eat the same type of meal every night.
So for this week’s meal plan, I’ve put together seven completely different vegetarian dinners to give you plenty of variety.
There is a cheesy sweet potato cottage pie, fresh vegetable pasta, biryani, a warm roasted cauliflower salad, toasted pitas and two very different curries.
Use the plan exactly as it is, swap the days around to suit your schedule or simply choose the recipes your family will enjoy most.
This Week’s Vegetarian Dinner Plan
Monday: Cheesy Sweet Potato and Lentil Cottage Pie
We’re starting the week with proper comfort food.
This vegetarian cottage pie has a hearty lentil and vegetable filling topped with sweet potato mash and melted mozzarella.
Serve it on its own or add a simple green salad on the side.

Tuesday: Vegetable Penne Primavera
Tuesday is a little lighter with a colourful penne primavera made with fresh vegetables, blistered balsamic tomatoes, basil and sage.
It is quick, easy and a lovely way to get plenty of vegetables onto the dinner table without making another curry.

Wednesday: Easy Vegetable Biryani
Midweek calls for biryani.
This is my simpler home-style vegetable biryani with carrots, green beans, peas, sweetcorn, golden potatoes, fried onions, mint and dhania.
Serve it with raita, dhall and grated carrot salad for a really satisfying vegetarian meal.

Thursday: Roasted Cauliflower and Hazelnut Salad
After biryani night, Thursday is fresh but still substantial.
Roasted spiced cauliflower is served over rocket and cucumber with feta, basil, toasted hazelnuts and creamy honey mustard dressing.
This is one of those salads that actually feels like dinner.

Friday: Cheesy Spinach and Corn Pitas
Friday dinner can be easy.
These toasted pitas are filled with spinach, sweetcorn, herbs, cheddar and mozzarella, then cooked until golden and crisp.
Serve them with a salad, chips or simply eat them straight from the pan while the cheese is still melted.

Saturday: Aloo Tikki Masala
For Saturday, we’re back to something a little more indulgent.
Crispy potato tikki are served in a creamy spiced tomato masala with garlic, curry leaves and garam masala.
Add rice, naan or roti and you have a proper weekend vegetarian dinner.

Sunday: Pumpkin Tikka Masala
Sunday finishes the week with one of my favourite vegetarian curries.
Roasted pumpkin is folded through a creamy tomato masala flavoured with ginger, garlic and warm spices.
Roasting the pumpkin first gives it beautiful caramelised edges while helping the pieces keep their shape in the sauce.
Serve with naan, roti or rice.

How to Use This Meal Plan
You do not have to follow the days exactly.
If Wednesday is your busiest evening, move the pitas there and save the biryani for a day when you have a little more time.
If you would rather have curry on Friday and pasta on Saturday, swap them around.
Think of the plan as a starting point rather than a strict schedule.

A Little Prep Makes the Week Easier
A few small jobs at the beginning of the week can make dinner much easier.
Wash and chop vegetables ahead where practical, check that you have basics such as onions, garlic, ginger and spices and make any sauces or dressings that will keep well in advance.
You can also cook the lentils for the cottage pie ahead if you are not using canned lentils, prepare the honey mustard dressing for the cauliflower salad and make your biryani masala in advance.
For the meals using fresh herbs, wash and dry them well and store them in the fridge so they are ready when you need them.
Your Weekly Shopping List

There is comfort food, something fresh, something quick and a few dishes that are lovely when you have a little more time to cook.
