A DREAMY BEETROOT ICE CREAM

A delightful easy beetroot ice cream recipe. Creamy, luxurious and delicious. No churn or ice cream machine required

Ingredients

• 250 g McCain Diced Beetroot
• 1 tbsp sugar
• 1 tsp lemon juice
• 500 ml cream
• 1 can condensed milk

Instructions

1. Add the frozen beetroot, sugar and lemon juice to a small pot and simmer on low heat for about 10 minutes
2. Remove from heat and allow to cool
3. Add oil to a large pot on medium heat
4. Whisk the cream until it forms stiff peaks, add the condensed milk and incorporate well
5. Add the garlic and ginger and fry for about a minute
6. Transfer to freezer friendly container and allow to freeze for at least 6 hours or overnight
7. Sprinkle and serve with nuts of choice if preferred
