This Creamy Beef and Mushroom Skillet is one of those easy dinners that delivers plenty of comfort without needing hours in the kitchen.
Tender strips of beef rump and mushrooms are cooked in a creamy paprika sauce with garlic, Worcestershire sauce and beef stock. It is rich, savoury and ready in around 30 minutes.
I originally developed this recipe years ago and served the creamy beef over crispy chips, which is why you will see chips in some of the photographs.
And honestly, it is still a delicious way to serve it.
But the beef and mushroom sauce is incredibly versatile. Serve it with pasta, mashed potatoes, rice or crusty bread and you have a completely different dinner every time.

What Beef Is Best for This Recipe?
I use beef rump for this recipe.
Rump has plenty of flavour and works beautifully for quick pan-frying when it is sliced thinly against the grain.
The important thing is not to cook all the beef at once.
Cook it in batches so that the strips have enough space to brown properly.
If you overcrowd the pan, the beef releases moisture and starts steaming instead of developing that lovely browned exterior.
Slice the Beef Thinly
Thin strips are important because this is a quick-cooking dish.
Cut the rump against the grain into fairly thin strips so that it stays tender.
If the beef is difficult to slice, place it in the freezer for about 20 to 30 minutes first.
It will firm slightly and become much easier to cut neatly.
Don’t Overcook the Beef
The beef only needs a quick sear at the beginning.
It will finish cooking when it is returned to the sauce later.
This is especially important with rump because leaving it simmering in the sauce for too long can make the strips tougher.
Brown it, remove it and add it back right near the end.
The Mushrooms
Mushrooms are a big part of the flavour in this dish, so give them enough time in the pan.
Once added, they will release quite a bit of moisture.
Keep cooking until that moisture starts evaporating and the mushrooms begin to take on a little colour.
This concentrates their flavour and gives you a much better sauce.
How the Creamy Sauce Comes Together
There is nothing complicated about this sauce.
The browned bits left behind by the beef, together with onion, garlic, mushrooms and paprika, create the flavour base.
Flour helps thicken the sauce, while beef stock gives it depth and Worcestershire sauce adds an extra savoury note.
The cream goes in towards the end.
Once the cream is added, keep the heat gentle. There is no need to boil the sauce aggressively.

How to Make Creamy Beef and Mushroom Skillet
1. Prepare the Beef
Slice the beef rump into thin strips against the grain.
Season with salt and freshly ground black pepper.
2. Brown the Beef
Heat the oil in a large frying pan over medium-high to high heat.
Add the beef in batches and sear quickly until browned on the outside.
Do not overcrowd the pan.
The beef does not need to be completely cooked at this stage.
Remove from the pan and set aside.
3. Cook the Onion
Reduce the heat to medium.
Add the chopped onion to the same pan and cook until softened and translucent.
If the pan is very dry, add a small splash of oil.
4. Add the Garlic
Add the crushed garlic and cook for about 30 seconds until fragrant.
5. Cook the Mushrooms
Add the sliced mushrooms.
Cook for approximately 5 to 7 minutes until they release their moisture and begin to brown.
6. Add the Flour and Paprika
Sprinkle over the flour and paprika.
Mix well and cook for about one minute.
This cooks out the raw flour taste before the liquid is added.
7. Add the Beef Stock
Gradually pour in the beef stock while stirring.
Scrape up any browned bits from the bottom of the pan because there is plenty of flavour there.
Add the Worcestershire sauce.
Allow the sauce to simmer for approximately 4 to 5 minutes until it begins to thicken.
8. Return the Beef
Return the browned beef and any juices that have collected on the plate to the pan.
Stir through the sauce and cook briefly until the beef is just cooked.
9. Add the Cream
Reduce the heat to low.
Pour in the cream and mix gently until everything is combined.
Allow the sauce to heat through without bringing it to a vigorous boil.
10. Finish and Serve
Taste and adjust the salt and black pepper.
Finish with plenty of freshly chopped parsley.
Serve immediately with your choice of pasta, rice, mashed potatoes or crispy chips.

One of the reasons I love this recipe is how easily you can change the meal simply by changing what you serve underneath it.
Pasta
Tagliatelle, fettuccine or penne are all delicious because they catch that creamy mushroom sauce beautifully.
Mashed Potatoes
Creamy mashed potatoes make this proper comfort food.
Rice
Steamed rice is an easy option and soaks up plenty of the sauce.
Crispy Chips

Not everything needs to be sensible.
Crusty Bread
A piece of warm crusty bread is perfect for mopping up whatever sauce is left on the plate.
Can I Use Another Cut of Beef?
Yes.
Any tender cut of beef suitable for quick cooking can work here.
Sirloin is a good alternative.
Whichever cut you use, slice it thinly and avoid simmering it for a long time.

Can I Make It Ahead?
This dish is best freshly made because the beef stays more tender.
You can, however, slice the beef, mushrooms and onion earlier in the day so everything is ready to cook.
If you do have leftovers, store them covered in the fridge and reheat gently over low heat.
A small splash of stock or cream can help loosen the sauce if it has thickened.
Easy Variations
Add More Mushrooms
If you are a mushroom lover, increase the quantity. Just make sure you cook them long enough for the excess moisture to evaporate.
Add Chilli
A pinch of chilli flakes gives the sauce a little warmth.
Add Fresh Thyme
A few thyme leaves work really well with the beef and mushrooms.
Use Pasta Water
If you are serving the beef with pasta, add a splash of reserved pasta water to the sauce if you want it slightly looser.
A Proper 30-Minute Dinner
This is the kind of recipe I love keeping for busy days.
There are no complicated ingredients and no long cooking time, but the combination of browned beef, mushrooms, paprika, stock and cream makes the finished dish taste far more indulgent than the effort involved.
Serve it over pasta one night and crispy chips another and it almost feels like two different meals.
Just don’t overcrowd the beef, let the mushrooms brown and save some bread for the sauce.

Note
BEEF:
Beef rump works well because it cooks quickly when sliced thinly. Cut against the grain for more tender strips.
COOK IN BATCHES:
Do not overcrowd the pan when browning the beef. Too much beef at once will release moisture and steam rather than brown.
MUSHROOMS:
Allow the mushrooms to release their liquid and begin browning before adding the flour.
CREAM:
Once the cream is added, keep the heat low and avoid boiling the sauce aggressively.
STOCK:
Beef stock gives the sauce a deeper flavour, although chicken stock can be used if that is what you have.
SERVING:
Serve with pasta, mashed potatoes, steamed rice, crispy chips or crusty bread.
LEFTOVERS:
Reheat gently over low heat. Add a splash of stock or cream if the sauce becomes too thick.
