A simple yet delicious Mackerel and Cashew nut salad with Beetroot Vinaigrette.

Ingredients

Instructions

  1. Cook the McCain Diced beetroot according to the package instructions
  2. In a blender add the cooked beetroot, balsamic vinegar, honey, lemon juice, salt and pepper to taste and blend well
  3. Slowly add the olive oil until you have a smooth consistency
  4. Sieve the beetroot mixture over a bowl and you will be left with a beautiful glossy vinaigrette
  5. On a platter, lay out the salad leaves, top with mackerel, cashews and feta
  6. Pour over the beetroot vinaigrette
  7. Enjoy!
