Mix the paprika, cumin, chilli flakes, garlic powder, salt and pepper until combined

Rub the chicken with the spice mix

Wash the rice and soak for 30 minutes - strain and keep aside

Heat oil in a large pot on medium to high heat and fry the spiced chicken in batches - remove and set aside

In the same pot add a blob of butter and the diced onions and garlic - fry for 4 minutes Add in the paprika and cumin powder and mix well

Next add in the Stir fry veg and cook for 5 minutes before adding in the tomatoes Allow to simmer for 6-8 minutes then add in the red kidney beans and rice and season

Cook for 2 minutes before adding in the stock, allow to come to a boil
