This easy kachumber salad is one of the simplest ways to add freshness and crunch to a curry, grilled meat or rice dish.

Made with cucumber, tomato, red onion, fresh coriander, cumin and lemon, it takes only a few minutes to put together and needs absolutely no cooking.

I served this kachumber as part of my 40-Minute Dinner Challenge with chicken and lentil curry and easy jeera rice with coriander.

It was exactly what the meal needed: something fresh, crisp and acidic alongside the warm spices and creamy curry.

Why You’ll Love This Kachumber Salad

  • Quick: It takes about 10 minutes to make.
  • No cooking: Everything is simply chopped and tossed together.
  • Fresh and crunchy: Cucumber, tomato and red onion bring texture and brightness.
  • Perfect with curry: Lemon and cumin help balance richer dishes.
  • Easy to customise: Add chilli, herbs or extra lemon to taste.
  • Made with everyday ingredients: Nothing complicated or difficult to find.

What Is Kachumber Salad?

Kachumber is a fresh chopped salad commonly served alongside Indian meals.

There are many variations, but the base usually includes cucumber, tomato and onion, with fresh herbs and simple seasoning.

Some versions include green chilli, others use cumin or different herbs, and some are kept extremely simple with only salt and lemon.

My version uses ground cumin, coriander, chilli flakes and fresh lemon juice for a little extra flavour while still keeping the salad light and fresh.

Ingredients for Kachumber Salad

Cucumber

I use half a large cucumber, cut into small chunks.

I prefer the cucumber slightly chunky rather than very finely diced because it gives the salad better texture and keeps it feeling fresh.

Tomatoes

You will need 2 medium tomatoes, chopped into bite-sized pieces.

Use ripe tomatoes for the best flavour, but avoid tomatoes that are too soft because they can make the salad watery.

Red Onion

I use 1 large red onion, chopped into chunks.

Red onion gives the salad crunch and a sharper flavour that works beautifully with lemon and cumin.

If your onion is very strong, you can soak the chopped pieces briefly in cold water, then drain well before adding them to the salad.

Fresh Coriander

A generous handful of freshly chopped coriander adds colour and freshness.

Add as much or as little as you like.

Ground Cumin

I use 1 teaspoon ground cumin.

This gives the salad a warm, earthy flavour and helps tie it into the rest of the meal, especially when serving it with curry or rice.

Chilli Flakes

A small dash of chilli flakes is optional.

I like the little bit of heat it brings, but you can leave it out completely if you want a milder salad.

Lemon Juice

A squeeze of fresh lemon juice acts as the dressing.

There is no need for a heavy vinaigrette here. The lemon adds acidity and keeps the salad light and refreshing.

How to Make Kachumber Salad

Step 1: Chop the Vegetables

Cut the cucumber into small chunks.

Chop the tomatoes into bite-sized pieces and cut the red onion into chunks.

Add everything to a mixing bowl.

Step 2: Add the Coriander

Add a generous handful of chopped fresh coriander.

Step 3: Season

Sprinkle over 1 teaspoon ground cumin.

Add a dash of chilli flakes if using.

Season with salt and freshly ground black pepper to taste.

Step 4: Finish With Lemon

Squeeze fresh lemon juice over the salad.

Toss everything gently until well combined.

Serve immediately.

Don’t Dress Kachumber Too Early

This is probably the most important tip for keeping your kachumber fresh.

Salt draws moisture from cucumber and tomatoes.

If you season the salad too far in advance, liquid will collect at the bottom of the bowl and the vegetables will lose some of their crispness.

You can chop everything ahead if needed, but add the salt and lemon just before serving.

What Should Kachumber Taste Like?

Kachumber should taste fresh first.

The cucumber and tomatoes should still be crisp and juicy, the red onion should add a little sharpness, and the lemon should give the whole salad a clean, bright finish.

The cumin adds warmth without making the salad taste heavily spiced.

If you use chilli flakes, they should add just a gentle background heat.

Can I Make Kachumber Ahead?

Yes, but I recommend preparing it in stages.

Chop the cucumber, tomato, onion and coriander and refrigerate them in a covered container.

Add the cumin, chilli flakes, salt, pepper and lemon juice just before serving.

This keeps the vegetables fresher and prevents the salad from becoming watery.

Can I Add Other Ingredients?

Absolutely.

Kachumber is very easy to adapt.

You could add:

  • Fresh green chilli
  • Mint
  • Spring onions
  • Radish
  • Finely chopped peppers
  • A little yoghurt for a creamier variation

I keep this version simple because it was made to sit alongside a flavour-packed curry and rice.

What to Serve With Kachumber Salad

This salad works beautifully with rich, spicy and grilled dishes.

I originally served it with:

Easy Chicken and Lentil Curry

It is also delicious with:

  • Durban chicken curry
  • Lamb curry
  • Fish curry
  • Biryani
  • Chicken tikka
  • Kebabs
  • Grilled lamb chops
  • Dhal and rice
  • Beans curry
  • Roti

Why Kachumber Works So Well With Curry

A curry is usually warm, richly spiced and often quite soft in texture.

Kachumber gives you the opposite.

It is cool, crisp, fresh and acidic.

That contrast helps balance the plate and makes the whole meal feel lighter.

The lemon cuts through richer sauces, while cucumber and tomato add freshness between bites.

My Tips for the Best Kachumber Salad

  • Use firm vegetables: Very soft tomatoes or cucumber can make the salad watery.
  • Keep the pieces chunky: This gives the salad better texture.
  • Add salt last: It helps prevent excess liquid from forming.
  • Use fresh lemon: Bottled lemon juice won’t give quite the same fresh flavour.
  • Don’t overdo the cumin: One teaspoon is enough to flavour the salad without overpowering it.
  • Serve fresh: Kachumber is at its best soon after mixing.

Kachumber Salad for My 40-Minute Dinner

This kachumber completed the fresh side of my first 40-Minute Dinner Challenge.

The full meal included:

  • Chicken and lentil curry
  • Easy jeera rice with coriander
  • Kachumber salad

The salad was the final component I made because it required no cooking.

While the curry finished simmering, I chopped the cucumber, tomatoes and onion.

I waited until everything else was ready before adding the salt and lemon, then tossed the salad and served it immediately.

That made it the perfect side dish for a meal where timing mattered.

Frequently Asked Questions

Is kachumber salad spicy?

Not necessarily.

The chilli flakes in this recipe are optional, so you can make it completely mild.

Can I leave out the coriander?

Yes.

The salad will still work without it, although fresh coriander adds lovely flavour and colour.

Can I use brown onion instead of red onion?

Yes, but red onion is slightly sweeter and works particularly well raw.

If using a stronger brown onion, you may want to soak it briefly in cold water first.

Can I make kachumber without cumin?

Yes.

The cumin adds warmth, but a simple cucumber, tomato, onion, coriander and lemon version is also delicious.

How long does kachumber keep?

It is best eaten fresh.

You can refrigerate leftovers, but the vegetables will release moisture and become softer over time.

Final Thoughts

Kachumber is one of those sides that takes very little effort but makes a big difference to a meal.

The fresh cucumber, tomato and red onion bring crunch, while cumin, coriander and lemon give the salad just enough flavour to stand on its own.

Serve it alongside curry and rice and it instantly makes the plate feel fresher, lighter and more balanced. “`
